Herb-Crusted Pork Tenderloin

This recipe is loosely based on Jen Hatmaker’s Herb-crusted Pork Tenderloin with Orange Chipotle Honey Glaze recipe, but a lot simpler. And still tasty!

Ingredients:

1 pound pork tenderloin

Salt and pepper

2 Tablespoons Dijon mustard

3 Tablespoons olive oil

1 Tablespoon soy sauce

Trader Joe’s Green Goddess seasoning

  • Preheat the oven to 400 degrees F

  • Trim any tendrils of fat or leftover membrane off the tenderloin. Give the meat a quick sprinkle of salt and pepper. In a small bowl, whisk up the Dijon, olive oil and soy sauce and then brush this mix liberally all over the tenderloin.

  • Right on your cutting board, sprinkle liberally the Green Goddess seasoning on all sides. Don’t have that seasoning? Sprinkle your favorite herbs!

  • In a skillet, heat 2 Tablespoons of Olive oil over medium high heat, then sear the tenderloin for 2 minutes per side. You aren’t cooking this through, just searing the herb crust and locking in the moisture. Put the tenderloin on a baking sheet, slide it into the oven and bake for 15 to 25 minutes. Cooking times will vary from kitchen to cut of meat to oven, so use a meat thermometer. When the internal temperature reads 145 take it out. Let it rest for 10 minutes before slicing and eating!
