Herb-Crusted Pork Tenderloin
This recipe is loosely based on Jen Hatmaker’s Herb-crusted Pork Tenderloin with Orange Chipotle Honey Glaze recipe, but a lot simpler. And still tasty!
Ingredients:
1 pound pork tenderloin
Salt and pepper
2 Tablespoons Dijon mustard
3 Tablespoons olive oil
1 Tablespoon soy sauce
Trader Joe’s Green Goddess seasoning
Preheat the oven to 400 degrees F
Trim any tendrils of fat or leftover membrane off the tenderloin. Give the meat a quick sprinkle of salt and pepper. In a small bowl, whisk up the Dijon, olive oil and soy sauce and then brush this mix liberally all over the tenderloin.
Right on your cutting board, sprinkle liberally the Green Goddess seasoning on all sides. Don’t have that seasoning? Sprinkle your favorite herbs!
In a skillet, heat 2 Tablespoons of Olive oil over medium high heat, then sear the tenderloin for 2 minutes per side. You aren’t cooking this through, just searing the herb crust and locking in the moisture. Put the tenderloin on a baking sheet, slide it into the oven and bake for 15 to 25 minutes. Cooking times will vary from kitchen to cut of meat to oven, so use a meat thermometer. When the internal temperature reads 145 take it out. Let it rest for 10 minutes before slicing and eating!
